Putting a really BIG and FUN christmas cake together can be simple! First bake 3 ordinarry cakes. It took me twice the dosage of a normal cake. The recipe goes:
  •  6 eggs ( for all 3 cakes!)
  •  3 cups white granulated sugar.
  •  3 cups margerine ( that will be about 400gr)
  •  vanilla extract
  •  300ml milk
  •  nearly 1kg white flour
  •  2 Tbsp baking powder ( 2 sachets)


Use your mixer to put them all together. Bake in 3 different pans. They should be symetrical. If you don't have any available, you can line any kind of oven baking pan with baking paper and use that instead of the the usual round baking pans.Use your imagination and look around your kitchen. Once they are baked, assemble them using long wooden sticks to make them stand nicely.So...
Start by covering the first with royal icing.It's easy...Then add the rest of the cakes and keep covering..

 Use the wooden sticks to make sure they stay together if you are in a bit of a hurry (like me!) and cannot wait for the royal icing to settle ( as you should!). It looks messy but it will come together...
 Now start putting the gingerbread houses around.I put the large ones first but next timw I will do it properly and put them last on top...Use ribbon to help it stay together! You will need some extra royal icing but you can also let it drip over them. It will stick and dry completely....
You can add as you go and it will grow taller and fuller. Yes, it's edible!

An event can be a party...like the summer parties we have in my family ( crazy bunch of people but you gotta love them all!)
